This galette is one of those simple seasonal pleasures. It’s rustic and unfussy, made with ingredients you likely already have on hand — including sourdough discard, which gives the crust a lovely depth of flavor and a tender, flaky bite.

Sourdough Discard Apple Galette Recipe:

For the Crust:

  • 200 g all-purpose flour
  • ½ tsp (about 3 g) salt
  • 30 g sugar
  • 156 g cold grated butter
  • 237 g cold sourdough discard

For the Filling:

  • 3 large apples, peeled, cored, and sliced
  • 80 g sugar
  • 1 tsp cinnamon
  • A splash of vanilla
  • 24 g melted butter

Extras:

  • A bit of flour for rolling
  • 1 beaten egg (for egg wash)
  • Coarse sugar, for sprinkling

Instructions:

1. Make the Dough:

  • In a large bowl, mix the flour, sugar, and salt.
  • Add the cold grated butter. Use your hands to rub it into the flour until the mixture feels sandy.
  • Pour in the cold discard and gently mix with your hands until it forms a rough dough.
  • Knead just a few seconds to bring everything together.
  • Place the dough on a floured sheet of parchment paper. Sprinkle a little more flour on top and roll it out slightly.
  • Chill the dough (on the parchment) in the fridge for 30 minutes.

2. Prepare the Apples:

  • Slice apples into ⅛–¼ inch slices.
  • In a small bowl, stir together the melted butter, vanilla, and cinnamon.
  • In a large bowl, toss the apple slices with sugar and the butter mixture using your hands until well coated.

3. Assemble the Galette:

  • Once chilled, roll out the dough on the parchment to about ⅛ inch thick. Transfer to a baking sheet.
  • Lightly dust with flour if sticky.
  • Arrange the apple slices on the dough, leaving a 1½ inch border all around.
  • Fold the edges over the apples in a rustic, crinkled shape.

4. Finishing Touches:

  • Brush the folded crust with beaten egg.
  • Sprinkle coarse sugar on the crust and over the apples.
  • Chill the galette in the fridge while you preheat the oven to 355°F (180°C).

5. Bake & Enjoy:

  • Bake for 55–65 minutes, or until golden brown and bubbling.
  • Let it cool before slicing — and enjoy every bite 😋
